Hawaiian Haystack

As I was preparing dinner tonight, my 4-year-old came up to investigate:
Sabrina: Mama, what’s for dinner?
Me: Hawaiian haystack.
Sabrina: Hawaiian haystack?
              That’s my favorite stack!!!
My kids love any meal that involves a food bar where THEY can choose the toppings.

This is an easy weeknight dinner, but it’s also a good recipe for large groups. You don’t have to measure anything, and each person will get exactly what they want!

Feel free to get creative with the toppings-- you can include ham or chicken.


 Ingredients:

Brown or white rice                                               
Cream of celery (or chicken) condensed soup          

Green onions—yum!
Canned pineapple chunks
Green onions, sliced                     
Celery, diced
Tomatoes, diced
Chow mein noodles
Green pepper, diced
Shredded Cheddar cheese
Shredded sweetened coconut

Directions:

Brown and white rice

 1. Cook the rice according to package directions.   
 
 2. Heat the soup.

3. Prepare the toppings and set on table, buffet-style. 


All the toppings you could want!
To serve:
Each person puts a small heap of rice on his or her plate, ladles soup over it and adds desired toppings.

You could load up on MORE veggies and add only a few calories! 


I used “Great Value” brand (Walmart) brown rice, canned pineapple, soup, cheese, and coconut.
I used “Calrose” brand white rice, and “La Choy” brand chow mein noodles.
