Fresh Salsa

This is the most delicious salsa I’ve EVER tasted.  A bowl of it can make a big bag of tortilla chips quickly disappear!  I made a double batch of salsa for this blog post, then took it to a pool party where I was asked for the recipe twice. When my family left early to catch the first B.Y.U. football game of the season on t.v., other party guests made me leave half the salsa behind in a paper bowl! At home, the salsa was pretty much finished off, especially by my 2-year-old. Of course I got the recipe from my mother-in-law J. The key is to blend the ingredients enough, but not too much.




Fresh ingredients!
 Ingredients:
28 oz. Can whole tomatoes
1 Tbsp. jalapeno, minced
(fresh or from jar)
1-2 Cloves garlic, minced                   
About ¼ of an onion, diced
1 tsp. Salt
½ c. Cilantro leaves
1-2 Fresh tomatoes, diced

Directions:
1. Put canned tomatoes, jalapeno, garlic, onion, and salt in blender.
Pulse about 15-20 times, until consistency is fairly smooth but looks a little chunky/grainy.
2. Add cilantro and pulse 5-10 more times, until cilantro leaves are medium-size green specks in the salsa; not totally pulverized. (If you blend the cilantro too long, your salsa will look brown and taste too cilantro-y.)
3. Pour salsa into a bowl and mix in fresh tomatoes!

Variation: You can add fresh or dried oregano, or even basil!

Mild variation (“The Laura”): Omit or decrease jalapeno.

I used “Great Value” brand (Walmart) canned tomatoes and jalapenos. I used “Morton” brand salt.

  1. Fresh salsa is a staple item around our house! This recipe is very similar to my "go-to" recipe, although I sometimes add some fresh lime juice and cumin. YUM! Now I'm off to check out your black bean quesadillas...
