Pumpkin White Chip Cookies

   
     Here’s a new favorite I made for playgroup today to test on my friends. The moms AND kids loved these! My school-age kids were lucky to get any when they came home later in the afternoon (don’t worry—I set a few cookies aside).  The cookie texture is a little cakey because of the pumpkin. Ingredients:
1 c. butter
½ c.  sugar
½ c. brown sugar
1 c. canned pumpkin
1 egg
2 tsp. vanilla
2 c. flour
2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. baking soda
2 c. white chocolate chips
1/2 c. (or more!) macadamia nuts

Directions:
1. Preheat oven to 350° F.
2. In large mixing bowl or electric mixer bowl, cream room-temperature butter with both kinds of sugar.
3. Add egg, vanilla, and pumpkin. Mix again.
4. Add the cinnamon, cloves, and baking soda, and 1 cup flour. Mix that, then add the second cup of flour.
5. Add white chocolate chips and nuts.
6. Grease cookie sheet. I always bake cookies on insulated baking sheets that consist of two layers of metal containing a thin cushion of air.
7. Drop heaping teaspoons of cookie dough on the baking sheet.
8. Bake 10-13 minutes. (11 minutes worked for me to get a soft cookie.)
9. Pull baking sheet out of the oven and let it cool for a couple of minutes sitting on a wire rack.
10. Use a spatula to remove cookies from the baking sheet and put on the wire rack.
11. Yum! Nothing like clusters of warm white chocolate chips in a spicy cookie to make you grab another one!
