My mother had my siblings and me assembling these cookies from the time we could hold a butter knife! The orange cookie box sitting on my mom’s kitchen counter (waiting to be frosted) was always a sure sign of Fall! Here in Maryland, we buy Ivin’s Famous Spiced Wafers at ACME, so when I went away to college in Utah, my mom mailed me boxes of these cookies in care packages. After a couple years in Utah, I discovered that Albertson’s owns ACME, and carries Ivin’s wafers. Also, you can pay $16 on Amazon for 3 boxes, but that seems a little steep!
During graduate school in Alabama, I wasn’t able to find the right cookies, so I used store-brand gingersnaps. They were not nearly as good!! My mother-in-law (ironically named Ginger) checked the gingersnap situation at Macey's in Utah today and reported that all available gingersnaps are smaller cookies than Ivin's (that's okay--more little sandwiches, right?) Ginger bought "Murray" brand gingersnaps. A taste test revealed they contain less molasses than Ivin's. Different isn’t always bad J I've looked Ivin's wafers up on the internet and apparently they are a Philadelphia tradition? Anyway, here’s what to do…
Ingredients:
16 oz. box Ivin’s Famous Spiced Wafers (48 cookies)
1 recipe buttercream frosting
Directions:
1. Spread 1 tablespoon frosting between 2 cookies.
2. Seal in Tupperware-type container overnight.
Moisture from the frosting will soften the cookies.

If you live in a dry area (this means you, Intermountain West) or are experiencing dry weather, you may want to slip a piece of bread into the cookie container to enhance the softening process.
