Fall Soup

      Savory but a tiny bit sweet, this is a great soup to bring to an autumn event or just eat at home! I first tasted it at a MOMS Club playgroup hosted by a friendly woman named Elisa who has since moved out of state. Wherever you are, Elisa (Pennsylvania?) your soup has served me well every fall! My church ladies love it.

Ingredients:
4 medium sweet potatoes 
A few of my ingredients
2 apples
2 medium onions
6 cloves garlic
4 Tbsp. olive oil
8 c. vegetable broth
¼ tsp. salt
¼ tsp. black pepper
1 tsp. dried thyme leaves
1 tsp. dried sage leaves
½ c. sour cream (optional)


Directions:
1. Preheat oven to 450° F.

2. Peel and coarsely chop sweet potatoes, apples, and onions (1” chunks). Peel garlic cloves.
Roasted and ready!

3. Combine chopped vegetables with olive oil and spices in a 13 x 9” casserole dish or roasting pan. Stir vegetables so they are coated with olive oil.

4. Roast vegetables uncovered for 30-35 minutes, until soft. Stir them every 10 minutes during this time.

5. Heat broth or bouillon until warm/hot.

6. Put vegetables in a blender and add enough broth to cover them. Puree. (I like some texture in soup—I don’t puree it long.)

7. Transfer puree to a large pot or crock pot and add remaining broth.

8. Serve plain or with a dollop of sour cream. I like to add ½ cup sour cream to the whole pot J
