into cubes of desired size (mine are about ¾ “) and lay on a double layer of
paper towels. Cover with another double layer of paper towels and a big cutting
board or plate to press out some of the water. *If you use Super Firm tofu, blotting
step is unnecessary : )<o:p></o:p></span></span></p>
<p class="MsoNormal"><span style="font-size: 14pt; line-height: 107%;"><span style="font-family: arial;">4. Combine
broccoli florets and 2 T. sesame oil and 1 t. seasoned salt in a mixing bowl.
Spread broccoli on one of the prepared pans. It won’t seem very oily, but it
cooks nice and soft!<o:p></o:p></span></span></p>
<p class="MsoNormal"><span style="font-size: 14pt; line-height: 107%;"><span style="font-family: arial;">5. Put tofu
on other pan. Drizzle 2 T. sesame oil on top, then carefully fold it in
(slightly “mix” with the tofu cubes). Optional: sprinkle a little salt on top.<o:p></o:p></span></span></p>
<p class="MsoNormal"><span style="font-size: 14pt; line-height: 107%;"><span style="font-family: arial;">6. Roast
tofu and broccoli about 20 minutes. Halfway through (after 10 min) pull pans
out and flip tofu and stir broccoli so they cook evenly. Put pans back in

and slice leeks. Saute at med-low with 3 T olive oil and 2 T margarine/butter
until soft, probably ready about the time the cabbage you already put in the

pot on high heat with 8 c. water and enough bouillon cubes to make 8 c. broth

broth is heating, slice/dice carrots, celery and potatoes. Add to pot. Let it
simmer or low boil until veggies are soft (probably won’t be much longer than
